Baby Beans with XO sauce

This recipe is using cheat XO sauce, you can also use store bought XO sauce

Never skip deep frying the baby beans to make crunchy baby beans

Ingredients :

500 gr baby beans

5 cloves garlic, minced

salt, sugar and white pepper

Oil for deep frying

XO sauce :

10 pcs dried scallop

10 pcs dried shrimp

3-4 tbsp Boncabe Teri

Method :

1. Soak dried scallop and dried shrimp in 3 tbsp of water for about 10 minutes

2. Strain the scallop and shrimp, don’t throw away the water. Finely chop dried scallop and dried shrimp

3. Heat oil in a wok, flash fry baby beans handfull at a time in hot oil. Strain fried baby beans and remove oil from wok

4. Heat the wok again, add 2 tbsp oil and stir fry garlic untill golden brown

5. Add chopped dried scallop and dried shrimp, strir fry until fragrant then add water from soaking dried scallop and dried shrimp, continue to stir fry until the water evaporated

6. Add deep fry baby beans, Boncabe teri and few dash of white pepper, stir together until well combine

7. Add salt and sugar if necessary

Cumi Goreng Tepung Sambal Kecap Petai

Bahan :

250 gr cumi, potong sesuai selera

3 siung bawang putih, haluskan

1/2 sdt garam

1/4 sdt merica

1 butir telur

10 sdm tepung tapioka

2 sdm tepung maizena

2 sdm tepung beras

minyak untuk menggoreng

Sambal Kecap Pete

1 papan petai

10 bh cabe rawit, potong

3 bh cabe merah, potong serong

5 siung bawang merah, potong tebal

5 sdm kecap manis

Metode :

1. Marinasi cumi dengan bawang putih, merica dan garam, biarkan minimal 1 jam di dalam kulkas

2. Campurkan tepung tapioka, tepung maizena dan tepung beras di dalam wadah

3. Balur cumi dengan tepung kering, tepuk2 agar sisa tepung rontok dan tidak menggumpal

4. Masukkan telur ke dalam sisa rendaman cumi, kocok rata.

5. Celupkan cumi ke dalam kocokan telur lalu balur lagi dengan tepung kering

6. Goreng cumi dengan minyak yang panas sampai kekuningan, angkat tiriskan

7. Tumis petai hingga matang dengan 1 sdm minyak goreng.

8. Masukkan cabe merah, cabe rawit, bawang merah dan kecap manis, biarkan mendidih lalu matikan api

9. Sajikan cumi goreng tepung dengan sambal kecap

Puding Regal

Bahan :

1 bks Nutrijell cokelat

150 gr Milo bubuk

1 sdm gula

700 ml air

biskuit Marie Regal

Vla Vanila :

300 ml susu cair

4 sdm susu kental manis

1 sdm tepung maizena

1/8 sdt garam

1 sdt vanilla essence

Metode :

1. Campurkan Nutrijell cokelat, milo bubuk dan gula pada panci

2. Tuang air sedikit demi sedikit sampai semua larut dan tidak ada yang menggumpal

3. Potong biskuit Marie sesuai selera, masukkan ke dalam cetakan

4. Masak puding sampai mendidih sambil diaduk dengan api sedang

5. Tuangkan puding ke dalam cetakan perlahan hingga menutup seluruh permukaan biskuit Marie

6. Biarkan hingga mengeras pada suhu ruang lalu dinginkan dalam kulkas minimal 1 jam

Vla Vanilla :

1. Masukkan tepung maizena dan susu kental manis di dalam panci, aduk hingga tercampur rata

2. Tuangkan susu sedikit demi sedikit hingga susu kental manis larut

3. Masak susu di atas api sedang sambil diaduk hingga Vla kental dan meletup-letup

4. Masukkan vanilla essence dan aduk hingga rata

5. Dinginkan Vla dengan metode ice water bath sambil diaduk untuk menghindari lapisan yang berkulit

6. Masukkan ke dalam wadah lalu dinginkan di dalam kulkas selama minimal 1 jam

Nasi Uduk Betawi

Bahan :

2 cup beras, cuci bersih

setengah butir kelapa parut

3 lbr daun pandan

2 btg sereh, geprek

5 lbr daun salam

10 lbr daun jeruk

1.5 sdt garam

Sambal Kacang :

200 gr kacang tanah, goreng

8 buah cabe merah, potong 2 cm

8 buah cabe rawit

4 siung bawang putih, kupas

1 sdm cuka

2 sdm gula pasir

1.5 sdt garam

250 ml air panas

Pelengkap

bawang merah goreng

kering tempe

telur dadar

semur tahu-kentang

bihun goreng

sambal terasi

Metode :

1. Campurkan kelapa dan 2-3 cup air lalu peras hingga menghasilkan 3 cup santan

2. Masukkan semua bahan ke dalam panci, lalu masak sambil diaduk dengan api sedang

3. Setelah mendidih, kecilkan api (paling kecil), tutup panci lalu masak selama 20 menit

4. Matikan api, tunggu 5 menit, buka lalu buang rempah daun dan aduk-aduk nasi hingga rata

5. Sajikan bersama pelengkap

Ps: bila menginginkan nasi uduk yg berwarna biru, peras santan dengan air seduhan bunga telang

Sambal Kacang

1. Goreng bawang putih, cabe merah dan cabe rawit hingga matang

2. Masukkan kacang tanah, bawang putih, cabe merah, cabe rawit, garam dan gula ke dalam food processor

3. Blender semua bahan hingga halus, masukkan air dan cuka kemudian blender lagi hingga tercampur rata

Purin (Japanese Creme Caramel)

Ingredients :

2 large eggs

200 ml milk

3 tbsp condensed milk

1 tsp vanilla extract

3 tbsp caramel sauce

Method :

1. Divide caramel sauce into 3 ramekins, set aside in the fridge

2. Add milk and condensed milk into sauce pan, combine well

3. Heat the milk over medium heat, until just about to boil

4. Beat egg with a fork or whisk, pour the milk little by little while continuing to stir

5. Add vanilla extract, and stir until well combined

6. Strain the mixture 2 times, to remove any clumps from the egg

7. Pour into ramekins while straining the mixture

8. Cover the ramekins with alumunium foil and steam the pudding in the warm steamer with wet napkin under the ramekins

9. Steam at very low heat until the custard is set, let it cool in the room temperature

10. Put in the fridge for minimum one hour

11. To serve, loosen the pudding from ramekin with small knife, place serving plate on top of it then turn it upside down and take off the ramekin

Indomie Tek Tek Pedas

Ingredients:

1 pack Indomie Goreng Jumbo

5 pcs beef meatball, sliced

1 egg, make into scramble

1 chye sim, cut 3 cm

1 small tomato, slice into 6-8

1 tbsp cooking oil

1 cup of water

Seasoning Paste:

2 cloves garlics

2 cloves shallots

2 red chili

5 chili padi

Nasi Gila

Ingredients :

2 cups of cold rice

3 chye sim, cut into 1 cm, separate the stems and leaves part

3 pcs beef sausages, slice

5 pcs beef meatball, slice

1 egg, beat and scrambled

4 cloves garlic, minced

3 tbsp tomato sauce

1 tbsp chili sauce

1 tbsp oyster sauce

1/4 cup of water

sugar, salt and pepper

4 tbsp cooking oil

Method :

1. Add oyster sauce to rice and combine until each grain of rice coated with oyster sauce

2. Heat the wok, add 2 tbsp cooking oil, stir fry half part of garlic until fragrant

3. Add chye sim stem, and to stir fry until the color changing into bright green then add the rice

4. After the rice become soft, add chye sim leaves and continue to stir fry until it’s cooked then transfer to serving plate

5. Add 2 tbsp oil into wok, stir fry the remaining part of garlic until fragrant

6. Add sausages, meatball and scrambled egg, stir fry for a while then add water

7. Put tomato sauce, chili sauce, sugar, salt and pepper and continue too cook until the sauce become thick. Serve over the rice
